UK urged to use Christmas leftovers on Boxing Day as waste hits 85,000 tonnes

Experts urge households across the UK to use up their Christmas dinner leftovers on Boxing Day to tackle a mounting food waste crisis. The crisis costs the average family of four £1,000 annually.

The push comes as experts warn that approximately 85,000 tonnes of edible food will be wasted during the festive season alone, contributing to 16 million tonnes of CO2 emissions each year.

The timing coincides with the introduction of AI-powered tools by major appliance brands designed to help consumers manage their fridge and freezer contents more effectively.

Over half of all food waste originates in homes, making household behavior critical to reducing environmental impact.

Catherine David, chief executive of the Waste and Resources Action Programme (Wrap), emphasized the dual challenge facing families. "A third of all the food we grow is wasted, and it's so noticeable at Christmas, a time when we want to put on a feast, but at the same time household budgets are particularly stretched," she said. "We can make our cash go further, and protect our planet's precious resources, this Christmas by ensuring we make the most of our leftovers [...]"

Circular Economy Minister Mary Creagh highlighted practical solutions. "Over half of food waste happens in our homes so reheating extra roasties and making the traditional turkey curry can save money and cut carbon emissions [...]" she stated.

The government is supporting the effort with £13.5 million in grants to food charities to redistribute 19,000 tonnes of surplus food from farms.

AI Tools Enter the Kitchen

Hisense launched its Dish Designer feature in May, integrated into the ConnectLife app. The AI tool has generated approximately 30,000 recipes across Europe since launch, with around 12,000 coming from UK users. The system creates personalized recipes based on fridge and freezer contents and dietary requirements.

Samsung has introduced similar technology with its Bespoke AI fridge freezers, which feature touchscreen displays that scan fridge contents to generate recipe suggestions.

Storage Guidance

Wrap recommends storing most uncut fruits and vegetables in the fridge at 5C or below. Exceptions include onions, bananas, and whole pineapples.

UK households waste 480,000 tonnes of potatoes annually—41% of all potatoes purchased.

The organization also clarifies date label confusion. "Best before" dates indicate quality rather than safety, meaning food remains safe to eat for days, months, or even years after. "Use by" dates refer to safety and should not be exceeded.

Nearly 40% of food waste occurs because people perceive items as off or past their date labels.
